Cookie Recipes

This recipe seems complicated, but it makes delicious cookies. My family looks forward to them every year.

I used whole wheat flour, dark brown sugar, organic, unsweetened coconut, and 1 large overripe banana

These are great dunked in coffee or hot chocolate.

These bars prove that pumpkin is good for more than carving into scary Halloween faces or baking in a Thanksgiving pie. And as desserts go, this one is fairly nutritious; pumpkin is rich in vitamin A (beta-carotene) and fiber. Don't tell the kids that, though.

Lemon Macaroons: Prepare as above, except substitute 1 tbsp lemon juice for the vanilla and add 1 tsp finely shredded lemon peel. Almond Macaroons: Prepare as above, except substitute one 8-ounce can almond paste (made without syrup or liquid glucose) for the coconut. Stir 1/2 cup of the beaten egg whites into crumbled almond paste; fold this mixture into the remaining egg whites. Continue as directed.

These New York icons are large, cakey cookies with the tops iced in halves: one side chocolate and the other vanilla.

My Husband and Daughter really like this recipe. For a twist, You may melt, in a double broiler pot , 1/2 cup semi-sweet chocolate chips then drizzle on top.

Makes 3 to 4 dozen sugar cookies
